Every agency reuses work, and every client believes they are getting something made for them. Both are true, and the gap between them is managed by care rather than by pretending reuse does not happen.
The failures here are not ethical, they are clerical, and they are entirely avoidable.
Client names survive in the parts of a demo that are not the main content: the browser address bar in a captured frame, a tab title, a breadcrumb, an autocomplete dropdown, the last item in a list that scrolled.
Review every step specifically for that rather than reviewing the flow. It is a different pass and it takes minutes.
The safest and usually best approach is reusing the sequence and the captions while re-recording the screens in the new client's environment.
That removes the leak risk entirely and still saves most of the time, because the thinking was the expensive part rather than the clicking.
Not that you have done this before — they hired you partly because you have. What they object to is evidence that their deliverable is somebody else's with the name changed.
The distinction is between reusing your expertise, which is what they are buying, and reusing an artefact carelessly, which suggests they were not thought about.
