Booking software lives or dies on one sequence: can the customer see what is available, at what price, and get a confirmation they trust.
Everything else -- reporting, channel management, CRM -- is bought on the assumption that the core sequence works, which means the demo has to establish it first.
Search, availability, price, payment, confirmation. Do not skip the awkward middle, because the awkward middle is what operators have been burned by.
If your flow handles a party size change, a date change, or an add-on cleanly, show that. Those are the moments where bookings are abandoned on the systems they currently use.
Travel operators cannot evaluate software in their peak season and will not change systems mid-season. Your demo has to be available and self-serve in the quiet months, when they are actually looking.
This is a category where a demo working without a sales call is worth a great deal, because the buying window is narrow and does not align with anybody's quarter.
The operator is buying an experience their customers will use, often on a phone, often abroad, sometimes on a poor connection.
A demo of the traveller's booking and confirmation is half your product from their point of view, and skipping it leaves the more emotional half of the decision unaddressed.
